- 12 Mozzarella string cheese (or other cheese cut into 24 finger-sized sticks)
- 1/2 cup flour
- 1/3 cup cornstarch
- 2 eggs
- 2 tablespoons olive oil
- 1.5-2 cups bread crumbs
- Oil for frying

- Prepare the Cheese:
- Cut each cheese string in half and place them in the freezer for 2-3 hours. This helps the cheese stay firm during frying.
- Prepare the Coating:
- In a bowl, combine the cornstarch and flour.
- In another bowl, whisk the eggs with the olive oil.
- In a third bowl, place the bread crumbs.
- Heat the Oil:
- Heat the oil for frying to about 350°F (175°C). The oil is hot enough when a few bread crumbs dropped in start to bubble.
- Coat the Cheese Sticks:
- Dip each cheese stick into the egg mixture, then roll it into the flour mixture.
- Dip it back into the egg mixture, then roll it in the bread crumbs until well-coated.

- Gently transfer the coated cheese sticks into the hot oil and fry until browned. Be careful not to overcook, as the cheese will start leaking out.
- Fry just a few sticks at a time to prevent them from sticking together and to ensure even cooking. They brown quickly, so keep an eye on them.
- Serve:
- Remove the fried cheese sticks from the oil and place them on a paper towel-lined plate to drain any excess oil.
- Serve immediately with your favorite dipping sauce, such as marinara, ranch, or garlic aioli.
