  • 12 Mozzarella string cheese (or other cheese cut into 24 finger-sized sticks)
  • 1/2 cup flour
  • 1/3 cup cornstarch
  • 2 eggs
  • 2 tablespoons olive oil
  • 1.5-2 cups bread crumbs
  • Oil for frying

  1. Prepare the Cheese:
  • Cut each cheese string in half and place them in the freezer for 2-3 hours. This helps the cheese stay firm during frying.

  • In a bowl, combine the cornstarch and flour.
  • In another bowl, whisk the eggs with the olive oil.
  • In a third bowl, place the bread crumbs.

  • Heat the oil for frying to about 350°F (175°C). The oil is hot enough when a few bread crumbs dropped in start to bubble.

  • Dip each cheese stick into the egg mixture, then roll it into the flour mixture.
  • Dip it back into the egg mixture, then roll it in the bread crumbs until well-coated.

  • Gently transfer the coated cheese sticks into the hot oil and fry until browned. Be careful not to overcook, as the cheese will start leaking out.
  • Fry just a few sticks at a time to prevent them from sticking together and to ensure even cooking. They brown quickly, so keep an eye on them.
