Ingredients:

  • 2 heads of cabbage
  • 2 lbs ground beef
  • 3 cups cooked rice
  • 1 egg
  • 1 tsp garlic
  • 1 tbsp parsley
  • 2 slices diced onion
  • 1 (15 oz) can tomato sauce
  • 1 (28 oz) can crushed tomatoes
  • 1/4 cup tomato sauce (for the meat mixture)
  • Salt & Pepper to taste

Preparation:

  1. Prepare Cabbage:
  • Place a head of cabbage in a pot of boiling water.
  • Peel off the cabbage leaves one at a time as they soften.
  • Cut off the rough part at the end of each cabbage leaf with a sharp knife.
  1. Prepare Filling:
  • In a large bowl, mix together the ground beef, cooked rice, egg, garlic, parsley, diced onion, 1/4 cup tomato sauce, salt, and pepper.
  1. Assemble Rolls:
  • Place a small amount of the meat mixture (about the size of a sausage) on a cabbage leaf.
  • Roll up the cabbage leaf like a fajita and place it seam side down in a casserole dish.
  • Optionally, place a few cabbage leaves and some tomato sauce on the bottom of the casserole dish to prevent the rolls from burning.
  1. Cook Rolls:
  • Pour the crushed tomatoes over the cabbage rolls.
  • Cover the dish and bake at 375ºF for approximately 75 minutes.
  • Reduce oven temperature to 325ºF and continue baking for about 90 more minutes, until the cabbage is tender. Baste every hour.
  1. Serve:
  • Serve the cabbage rolls with tomato sauce.
